Project #28 Warm up the oven and my heart

Nothing says  Halloween more than a pumpkin - I decided to make pumpkin coconut bread for breakfast, and it turned out delicious!! I changed it so  it served 12 people, or so three people can have four slices. Hehe.  After looking through oodles of recipes, I settled on this one because it contained lots of spices that remind me of fall.  

Pumpkin Coconut Bread

Ingredients

  • 1 cup white sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 (15 ounce) can pumpkin puree
  • 1-3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 1/3 cup water
  • 1/2 cup flaked coconut
  • 1/4 cup and 2 tablespoons chopped walnuts

Directions

  1. Preheat oven to 350 degrees F. Grease and flour one 9 x 5 inch loaf pan.
  2. Mix together sugars, oil, and eggs. Mix in pumpkin. Add flour, salt, soda, and spices, and then water. Stir together until just moistened. Stir in coconut and nuts. Pour batter into prepared pan.
  3. Bake for 60 minutes, or until tester inserted in the center comes out clean.
